Jam Filled Sugar Cookies
We’ll divide the dough into two parts: 70% and 30%. The larger portion of dough will be used to make these linzer inspired cookies. I must admit, these are the ones I’m looking forward to the most. Unlike traditional linzer cookies, these don’t contain almond flour. However, they’re just as soft, crumbly, and sweetly spiced with cinnamon and cardamom.
Red Heart Sugar Cookies
These chocolate dipped sugar cookies stand out as the most eye-catching in this assortment. You can choose any chocolate you like; I’ve gone with white chocolate, which complements this pink sprinkle mix from Asda.
A batch of just these red heart sugar cookies would make a great gift because once the chocolate sets, you can easily stack them on top of each other.
Heart Sugar Cookies
Ingredients
Sugar Cookie Dough
- 170 g unsalted butter
- 160 g caster sugar
- 2 tsp vanilla bean paste
- 2 eggs
- 30 g cornflour
- 380 g plain flour
Jam Filled Cookies
- ½ tsp cinnamon powder (optional)
- ½ tsp cardamom powder (optional)
- seedless raspberry jam
- icing sugar
Red Heart Sugar Cookies
- red gel food colouring
- white chocolate
- sprinkles
Instructions
Base Dough
- Cut your butter into small cubes and allowing it to reach room temperature. Then, add the butter to a large bowl.
- Add caster sugar to the bowl and whisk together.
- Next, add the eggs and vanilla bean paste, and whisk until fully combined.
- Sift in the flour and cornflour to remove any lumps. Fold the dry ingredients in, until no flour streaks remain.
- Separate the cookie dough into 70% (for the jam filled cookies) and 30% (for the red heart cookies).
- For the 70% portion of dough, add some cinnamon and cardamom powder (optional).
- For the 30% portion of dough, add red gel food coloring and mix thoroughly until the entire dough is red.
- Wrap each portion of dough separately in cling film. After wrapping, you can use a rolling pin to gently roll them out into a more even shape. Then, chill the dough in the fridge for 45 minutes.
Jam Filled Cookies
- Preheat your oven to 190°C and line a baking tray with parchment paper.
- Unwrap the cling film from the larger portion of cookie dough.
- Generously dust your counter and rolling pin with icing sugar instead of flour. Then, roll out the cookie dough to your desired thickness.
- Dip your cookie cutter into some icing sugar, and then cut out your cookies. Then, place the cookies onto your lined baking tray, leaving some space between them.
- With a heart-shaped cookie cutter, cut out hearts from half of your cookies, before baking at 190°C for 10 minutes.
- Once your cookies have cooled down, dust icing sugar only on the ones with the heart cutouts.
- Flip the bottom cookie over for a flat edge and dollop a teaspoon of jam. Then, sandwich the heart-cutout cookies on top, adding more jam to the center.
Red Heart Sugar Cookies
- Take your red dough from the fridge. If the dough cracks when rolling, let it sit at room temperature for a few minutes, before working with it again.
- Dust your heart-shaped cookie cutter with icing sugar, and cut out your cookies.
- Place your heart-shaped cookies onto a baking tray lined with parchment paper, and bake at 190°C for 10 minutes.
- Squash the leftover dough scraps together, wrap them in cling film, and place in the fridge to chill before working with again.
- Once your cookies have baked and cooled down, melt some white chocolate.
- Dip the cookies into the melted chocolate and place them on parchment paper. Before the chocolate sets, top with sprinkles.
Notes
- If you only want to make the red heart cookies, add your red gel food coloring with the wet ingredients before sifting in your flour and cornflour.
- If you only want to make the jam filled cookies, add your cinnamon and cardamom powder with the rest of the dry ingredients.
- Dust your counter with icing sugar instead of flour, because adding too much flour to the dough will change its texture.
