Easy Hack

You can hand-dip strawberries into melted chocolate, but it often creates a pool of chocolate at the bottom. If you want to elevate the appearance of your chocolate covered strawberries, all you need is a tall glass and some sugar. Check out the video below, for more on this easy hack!

Common Mistakes

As easy as this recipe may seem, making this treat isn’t an everyday thing. Without refreshing your memory, there are still a few places where you can make mistakes.

Water

Any water remaining on your strawberries will cause the chocolate to seize, resulting in a gritty texture. I have not had to fix seized chocolate before, but was surprised to read in this blog post that you can fix seized chocolate with boiling water.

Parchment Paper

This is often overlooked until you’ve just dipped a strawberry into chocolate. You wonder, “Where do I put this now?” The answer is: not on a plate! You want to set your chocolate covered strawberries onto parchment paper so that they will release easily once the chocolate has set.

Too In Advance

I recommend making these the same day you plan to serve them. But, if you need to make them the night before, put the strawberries into a container lined with kitchen towels. The container shouldn’t be airtight (you can loosely cover it, for example). Then, store it in the fridge.

When you take the container out, allow it to reach room temperature before removing the chocolate covered strawberries. Otherwise, they may develop a layer of condensation, which is perfectly fine to eat but could be something you want to avoid, if you’re presenting them in a beautiful way.

Chocolate Covered Strawberries

There's no baking involved when making chocolate covered strawberries, just a few ingredients and a lot of love!

Ingredients
  

Wash

  • 4 cups cold water
  • 1 cup vinegar

Chocolate Covered Strawberries

  • 450 g strawberries
  • 150 g milk chocolate
  • 50 g white chocolate

Instructions
 

Wash

  • In a large bowl, combine 4 cups of cold water and 1 cup of vinegar.
  • Wash the strawberries in the bowl then let them sit for 3 minutes.
  • After 3 minutes, thoroughly rinse the strawberries under cold water.

Chocolate Covered Strawberries

  • Dry each strawberry thoroughly, especially under the leaves. Then, allow the strawberries to rest at room temperature.
  • To melt the milk chocolate, chop it into small pieces and microwave at 30-second intervals, stirring well between each interval. Melt the chocolate 75% of the way and stir, letting the residual heat finish the process.
  • For an even chocolate coating, insert wooden skewers into the stems of the strawberries.
  • Dip the strawberries into the melted chocolate, shaking off any excess.
  • Then sink the skewered strawberries into a tall glass filled with sugar so the chocolate sets upright. Repeat for the remaining strawberries.

White Chocolate Drizzle

  • Once the milk chocolate has set, melt the white chocolate and transfer it into a piping bag.
  • Hold a chocolate covered strawberry in the air then apply slight pressure on the piping bag to release the white chocolate. Drizzle the white chocolate over the strawberry.
  • Place the strawberry on parchment paper to allow the chocolate to set.
  • For an added crunch, chill the strawberries in the fridge.

Notes

  • The strawberries must be completely dry before dipping into melted chocolate.
  • If you’re hand-dipping the strawberries, place them on parchment paper to set.
  • Make these the same day you plan to serve them.
