These make a great snack because they’re not overly sweet, but satisfy all those chocolatey cravings. If you’ve found yourself with an abundance of dates this Ramadan, or you’re simply looking to make healthier treats, you’ll love this recipe!

Dates

Before buying dates, please take the time to ensure they’re ethically sourced. You can go with any dates for this recipe. My preference is Medjool dates because they have a caramel-like taste. They’re also plump and large, so you can get a nice amount of peanut butter filling.

Chocolate

I made these chocolate covered dates to share with family members, who aren’t huge fans of dark chocolate. I could have gone with just milk chocolate, but decided on a 2:1 ratio of milk to dark chocolate instead. The verdict? Nobody could tell there was dark chocolate in this recipe!

This ratio gives you just the right amount of sweetness from the milk chocolate, with richer flavour notes from the dark chocolate.

Coconut Oil

If you dislike coconut, don’t worry – adding a bit of coconut oil to the chocolate won’t give it a coconut taste. However, this addition is still optional because it’s mainly for appearance. The coconut oil gives the chocolate covered dates a beautiful glossy finish.

These chocolate covered dates give you an even better snacking experience. As you break into the chocolate shell, you’re greeted by a sweet, caramel-like soft texture. For a brief moment, your taste buds are awakened by the contrasting saltiness from the salt flakes, followed by the satisfying crunch of roasted peanuts.

Chocolate Covered Dates (With Peanut Butter)

These chocolate covered dates taste even better than Snickers! The caramel-like Medjool dates paired with crunchy chopped peanuts is so delightful, that you'll keep coming back for more.

Ingredients
  

  • 12 Medjool dates
  • 50 g peanut butter
  • 150 g milk chocolate
  • 75 g dark chocolate
  • 1 tsp coconut oil (optional)
  • 10 g unsalted roasted peanuts
  • 1 tsp salt flakes

Instructions
 

  • Line a tray with parchment paper.
  • Wash the dates under cold water, then thoroughly dry them with a kitchen towel.
  • While the dates are air-drying further, chop the peanuts.
  • Slice the dates on one side (not all the way through), and remove the pit.
  • Fill the dates with peanut butter. You can use a spoon or a piping bag for this step; both work!
  • Insert a toothpick into each date to hold it closed and make it easy to dip into the melted chocolate.
  • Break the chocolate into small pieces and place in a heatproof bowl. Add a teaspoon of coconut oil (optional). Melt the chocolate mixture over a double boiler, stirring constantly until the chocolate is completely melted and smooth.
  • Dip the dates into the melted chocolate and place them on the lined tray.
  • Sprinkle with chopped peanuts and salt flakes.
  • Place the tray into the fridge and let it chill for an hour.
  • Once the chocolate has set, remove the toothpick from each date and enjoy!

Notes

  • When inserting the dates onto the toothpick, position them closer to the end of the toothpick, not the middle. This ensures easy removal once the chocolate has set.

How Long Do Chocolate Covered Dates Last?

If you store these in an airtight container, in the fridge, they should stay fresh for up to a week. The reason you want to keep them chilled is because the coconut oil makes the chocolate softer and more likely to melt at room temperature.
